When it comes to foodbourne illnesses, people want to blame the last thing they ate for making them ill. It is imposible to know what food made an individual sick. The incubation time of a pathogen or toxin can take anywhere from a day to a month, making it challenging to figure out the cause of the illness.
CDC (Centers for Disease Control) estimate 76 million cases of foodbourne illnesses are reported each year. There are approximately 325,000 hospitalizations and 5,000 deaths related to foodbourne diseases.
It is important to have a good food history in order to investigate for potential causes. Please report any concerns to the Health Department. They will ask for a list of foods eaten in the last several days.
